A few folks here may know through my various grapevines that I have not been content with my current job…There’s been a lot of crap happening. Lately it’s been much worse and I’ve gone out to seek employment elsewhere. In a nutshell, my work fired the woman who directed the nursing department, for good reasons. She used to be an excellent leader, but as happens with so many leaders, she turned into a typical BOSS, who left her heart under some desk somewhere. The people who are above her haven’t moved fast enough to clean up the MANY messes she made.

Road Rage Version 2

How perfect is this? I made a semi New Year resolution: Not to get so pissed off when driving. I’m dangerous when I’m road raging.

However I must admit I have had a very hard time behaving myself…people are such assholes at times. Especially MA drivers.

Anyway I just bought one of these…and instead of yelling, screaming and giving others the royal finger, I will simply place one of these big cards over my window. :mrgreen:

Each stamp is legal tender

Another item I must add to my already HUGE collection of Ocean Liner memorabilia:

The first set of commemorative stamps marking the 96th anniversary of the Titanic have been designed.

The collectable First Class stamps have been produced by the Titanic Heritage Trust in conjunction with Royal Mail and will be the first in the ‘White Star History’ series being rolled out every year from now until 2012 - the centenary of Titanic’s maiden voyage.

Each sheet in the first series includes five RMS Titanic ‘The Fourth Funnel’ and five ‘SS Nomadic The Farewell’ stamps.

The images are taken from fine art paintings by Belfast artist Jim McDonald whose work depicts shipyard people, street children and pub scenes from the bygone era in the east of the city.

A First Day Cover with Belfast or Southampton postmarks and franked 15, April 08 will also go on sale.

Each envelope has been exclusively designed for Titanic Heritage Trust by AG Bradbury.

Howard Nelson, founder and chairman of the Titanic Heritage Trust said: ” We are going to use a number of different images each year until 2012 when there will be a special edition and also a presentation pack.

“Each stamp is legal tender, so if people wanted to they could put it on an envelope and post it, but most people will just be collecting them.

“We will be using different artists for each set of stamps but we rather liked Jim McDonald’s interpretations.”


I ordered my set already
and can’t wait to get it…I need to have a special frame made for the sheet too…

Guess where I’m going

Can you guess where I’ll be going?

Here’s some hints:

1) Leaving Cow Hampshire on Friday February 2nd

2) Going far far away. To where it’s warm. But staying in the states.

3) Coming back Monday February 4th, sometime. (After an evening of sobering up I am sure)

4) The place will be mobbed with A LOT of people. I mean A LOT. And it will be on national TV. Perhaps I will end up on TV. (I hope the hell not)

So where will I be Sunday February 3rd????

Spiced Up Macaroni and Cheese

1½ cup Whipping cream
5½ cup Half and half
½ pounds Chihuahua cheese, shredded
½ pounds Manchego cheese, shredded
1 teaspoon Celery seeds
¼ teaspoon Cayenne pepper
3 large Egg yolks
1 pounds Elbow macaroni, cooked
½ cup Grated Cotija
½ cup Bread crumbs
Chopped fresh parsley

Preheat oven to 400 degrees F. Combine cream, half and half, Chihuahua and Manchego cheese in heavy medium saucepan. Stir over low heat until cheese melts. Remove from heat. Add celery seeds and cayenne pepper. Season sauce with salt and pepper. Beat yolks in large bowl to blend. Gradually whisk in sauce. Add macaroni and stir to blend.

I prefer to bake my casseroles in my cast iron pans…I used my #8 Griswold for this recipe…most people use baking dishes or casserole pans though.

Butter 4 quart baking dish. Pour macaroni and sauce into dish. Mix Cojita cheese and bread crumbs in small bowl. Sprinkle evenly over macaroni. Bake until sauce is bubbling and top is beginning to brown, about 25 minutes.

This recipe is not at all healthy. It’s fattening as hell. It’s high in calories, saturated fats and sodium. But it’s very good and hearty and filling- great for cold winter days. Comfort food at it’s best. Food like this has helped Marion gain back much of the weight she had lost…Oh, and this dish tastes wonderful!!

White blouses and colorful silky scarves

Today we did something totally different.

In my work with people who have dementia, I always noticed some common things among them all. They go back through time, through their lives and often end up in their early teen years, where they stay for awhile. Most people with dementia reach a point where they no longer care about their personal appearance; many take on traits that shock their families. For example, an always modest woman will frequently become what we call a “stripper”- she loses all modesty and prefers to be naked ALL the time and could care less who is around. A man who spent his life in shorts will often become a man who over dresses and hides as much skin as he can. It’s strange phenomena and its common.

Marion has been doing so much better. She amazes me with her abilities she has retained in spite of her dx with Alzheimer’s Disease. She’s was dx three years ago and her family believes she’s been demented for about 6 or 7 years altogether. I suspect this to be true. She is 87 years old. She’s been through a lot in the past year. It’s rare to see people with dementia improve without medication.

Chicken & Stuffing Bake

What to do with leftover chicken? Or turkey?

Chicken and Stuffing Bake

Pre Heat oven to 350 degrees

2 cups cooked, cubed chicken (or turkey)
1 Box Stove Top Chicken flavored stuffing, prepared according to directions
1 can Cream of Chix soup
1 package of Pillsbury Crescent Rolls

In a large bowl, mix cubed chicken, stuffing and soup; shape into a loaf.
Spread out crescent roll dough, with pointed ends laying outward (on a baking sheet)
Place chicken/stuffing loaf onto dough and wrap the ends up over loaf.

Place in oven and bake for 35 minutes. Very easy to make and very YUMMAY.
