Apple Cider Pot Roast

Another recipe from my collection. This is an old twist to a popular meal: Adding apple cider to a pot roast gives it extra tang and ting- it sweetens the flavor a little and adds a nice aroma. Some people like to add sliced peeled apples to the mix as well: I would use 3 Granny Smiths, pared, cored and sliced- add to the pot about half an hour before cooking ends. REMOVE any apple slices not eaten though! They turn to total MUSH otherwise.
2 tablespoons Oil
1 4 lb Bottom Round Roast (any cut will do- even cheap meats cook up well in crock pots!)
2 cups Apple cider
3 Onions, peeled- either cut up or sliced
6 Carrots, sliced diagonally
5 Celery stalks, sliced diagonally
8 Potatoes, pared — cubed
2 Cloves garlic minced
2¼ teaspoons Salt
½ teaspoon fresh ground pepper
2 bay leaves
1 1/2 cups cold water
¼ cup flour
Heat oil in dutch oven and brown roast on all sides. In a large crock pot, layer veggies, potatoes and meat in that order. Mix cider, salt, pepper and garlic in medium bowl. Pour over meat in pot. Place bay leaves on top… Cover and cook over low for 6-8 hours. About 30 minutes before cooking ends, remove bay leaves and 1 1/2 cups of liquid from pot- skim off fat; mix with the cold water and flour to make a gravy. Serve over the meal and enjoy!

Oh, this looks goooooood, Raven! I’ve got to get my crockpot down from the pantry shelf; it’s certainly time to use it! And, I get to start baking my own bread again, now that the Fall temperatures have arrived and I won’t make my air conditioning bill shoot to the moon

Danke Raven and Frau Vader will try this recipe with beef or a pork roast. Pardon me if we leave out the two cups of apple cider because it goes through me like Slick Willie Clinton after a high school girl intern! We’ll use 3/4 of a cup of apple schnapps. Don’t want to replace the illegal Mexicans by being the one who runs down the roadways making the yellow lines!

Thank you for the recipe. I am a single Dad and I’m not a very good cook. I’m getting better but I can always use the help.
Thank you for the pictures, too. I spent my summers growing up in the mountains of western Maine (Roxbury/Andover) and I really miss it. I wish my boys had the same opportunity, but God apparently wants us in Kansas for some reason.

Oh it was delicious! A huge crock pot, 8 Qts- and no leftovers. mmMMmm. And Kat you can’t mess this up, really. Add other things to it, take out stuff you don’t like or think you like. And use cheap cuts of meat- trust me. It all comes out equal. An expensive cut tastes no different than a cheap one.

yes darth, I know a few folks who cannot tolerate apple cider. So make this without it. Just use water instead- but I would mix some sort of gravy enhancer with the water. Otherwise it’s just boring tasting.
